Description

These Butter Swim Biscuits are rich, fluffy, and irresistibly buttery with no kneading or rolling required! Paired with a sweet and spicy peach jalapeรฑo jam, this easy biscuit recipe makes for a delicious breakfast, brunch, or side dish.

For the Jam:

  • 2 peaches, chopped
  • 1 jalapeรฑo, deseeded and minced
  • Juice from 1 lemon
  • 1/2 cup granulated sugar

For the Biscuits:

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon sugar
  • 1/2 cup shredded cheddar cheese
  • 1 1/2 cups buttermilk (add more if needed)
  • 1 stick (1/2 cup) unsalted butter, melted

Instructions

  • Make the Jam:

    • In a saucepan, combine chopped peaches, minced jalapeรฑo, lemon juice, and sugar.
    • Bring to a rapid simmer over medium heat.
    • Simmer for 20 minutes, stirring occasionally, until thickened. It should coat a spoon or leave a clean mark when a spatula is run through it. Set aside.
  • Preheat & Prepare the Batter:

    • Preheat oven to 425ยฐF (218ยฐC).
    • In a bowl, whisk together flour, baking powder, salt, sugar, and cheddar.
    • Add buttermilk and mix until you get a thick, chunky batter (not pourable like cake batter but not a solid dough).
  • Assemble the Biscuits:

    • Pour melted butter into an 8ร—8-inch baking dish.
    • Add the biscuit batter, spreading it evenly into the corners. The butter will pool on topโ€”this is normal!
    • Add dollops of jam at each corner and a final dollop in the center.
    • Swirl the jam into the biscuit dough using a chopstick, toothpick, or butter knife.
  • Bake:

    • Bake for 30-35 minutes, or until biscuits are golden brown and cooked through.

    • Drizzle with honey while warm (optional).
    • Slice and serve immediately!

  • Make it Spicier: Leave the jalapeรฑo seeds in for extra heat.
