  • 1 package (8 oz) cream cheese, room temperature
  • 2 cups (280 g) rotisserie chicken, shredded and chopped
  • 1 cup (113 g) mozzarella cheese, shredded
  • 1 cup (113 g) sharp cheddar cheese, shredded
  • 1/3 cup (84 g) buffalo sauce
  • 1 sheet puff pastry, thawed
  • 1 large egg, beaten
  • Ranch dressing, for drizzling
  • Extra buffalo sauce, for drizzling
  • Parsley, for garnish

Instructions

  1. Preheat the oven to 400ยฐF. Line a large baking sheet with parchment paper.
  2. In a medium bowl, combine cream cheese, shredded chicken, mozzarella cheese, cheddar cheese, and buffalo sauce. Stir until well combined (makes about 3 cups of filling). Set aside.
  3. Roll out the puff pastry into a 9ร—12-inch rectangle on a lightly floured surface.
  4. Spread 2 cups of the buffalo chicken mixture evenly over the pastry, leaving a ยฝ-inch border along one long edge.
  5. Brush the border with the beaten egg to help seal the pastry.
  6. Starting from the opposite long edge, roll the pastry into a log, sealing the edges as you go. Slice the log into 12 equal pieces.
  7. Brush the exposed edges of the roll-ups with the remaining beaten egg. Bake for 15-18 minutes.
  8. Remove the roll-ups from the oven, top each with a spoonful of the remaining buffalo chicken mixture, and bake for an additional 6-8 minutes, until the pastry is golden and the mixture is heated through.
  9. Drizzle with extra buffalo sauce and ranch dressing, then garnish with parsley. Serve warm.
