- 1/4 cup cooked shredded chicken, warm
- 1 tablespoon hot sauce (such as Frankโs Red Hot)
- 1/2 tablespoon mayo (optional)
- 1 tablespoon carrot, grated
- 1 tablespoon celery, finely sliced
- 1 tablespoon green onion (or red onion), sliced or diced
- 1 tablespoon blue cheese, room temperature, crumbled
- 1 tablespoon salted butter, room temperature
- 2 slices bread (use gluten-free bread for a gluten-free version)
- 1/2 cup cheddar cheese, shredded (or 2 slices), room temperature
Instructions
- In a small bowl, mix the chicken, hot sauce, mayo (if using), grated carrot, sliced celery, onion, and blue cheese until well combined.
- Butter the outside of each slice of bread.
- Sprinkle half of the shredded cheddar on the inside of one slice of bread, then top with the buffalo chicken mixture.
- Add the remaining cheddar cheese and top with the other slice of bread.
- Grill in a preheated pan over medium heat for 2-4 minutes per side, or until golden brown and the cheese has melted.
- Serve hot and enjoy your spicy, cheesy sandwich!
