Description

This Buffalo Chicken Grilled Cheese Sandwich is the ultimate comfort food with a spicy twist! The combination of tender shredded chicken, creamy blue cheese, and a kick of hot sauce between two slices of crispy, golden-brown bread will have you craving more. Perfect for a quick lunch or dinner!


Ingredients

  • 1/4 cup cooked shredded chicken, warm
  • 1 tablespoon hot sauce (such as Frankโ€™s Red Hot)
  • 1/2 tablespoon mayo (optional)
  • 1 tablespoon carrot, grated
  • 1 tablespoon celery, finely sliced
  • 1 tablespoon green onion (or red onion), sliced or diced
  • 1 tablespoon blue cheese, room temperature, crumbled
  • 1 tablespoon salted butter, room temperature
  • 2 slices bread (use gluten-free bread for a gluten-free version)
  • 1/2 cup cheddar cheese, shredded (or 2 slices), room temperature

Instructions

  • In a small bowl, mix the chicken, hot sauce, mayo (if using), grated carrot, sliced celery, onion, and blue cheese until well combined.
  • Butter the outside of each slice of bread.
  • Sprinkle half of the shredded cheddar on the inside of one slice of bread, then top with the buffalo chicken mixture.
  • Add the remaining cheddar cheese and top with the other slice of bread.
  • Grill in a preheated pan over medium heat for 2-4 minutes per side, or until golden brown and the cheese has melted.
  • Serve hot and enjoy your spicy, cheesy sandwich!

Notes

  • Adjust the Heat: Hot sauces vary in heat, so feel free to add more or less to adjust to your preferred spice level.
