Instructions
Make the Carrot and Celery Slaw
-
In a small bowl, toss carrot, celery, and vinegar with a pinch of salt. Set aside until ready to serve.
Make the Buffalo Chicken Filling
-
In a large bowl, stir together cream cheese, melted butter, hot sauce, and Cajun seasoning until smooth and well combined.
-
Fold in chopped chicken, shredded cheddar, blue cheese, and 3 Tbsp. of chives until evenly distributed.
Prepare the Puff Pastry Bites
-
On a lightly floured surface, roll the puff pastry into a 12″ x 10″ rectangle. Use a bench scraper or sharp knife to cut the dough into 12 squares.
-
Spray a standard 12-cup muffin tin with cooking spray. Gently press each square of puff pastry into the bottom of the muffin wells.
-
Fill each pastry cup with the buffalo chicken mixture.
Bake the Bites
-
Bake the bites until the pastry is golden brown and the tops are bubbling, about 17 to 20 minutes. Let cool in the tin for 5 to 10 minutes.
Serve
-
Transfer the bites to a platter. Top with the reserved carrot and celery mixture, and sprinkle with the remaining 1 Tbsp. of chives. Serve with ranch dressing on the side.
Notes
-
If you prefer a spicier bite, you can add extra hot sauce or cayenne pepper to the filling.
-
These can also be made ahead and reheated for a quick appetizer.
