Description

These Buffalo Blitz Bites are a fun, bite-sized version of classic buffalo chicken dip. With a crispy puff pastry shell filled with creamy chicken, hot sauce, and gooey cheese, they’re topped with fresh celery and carrot slaw for a cool crunch. Perfect for game day or as a snack!


Ingredients

For the Carrot and Celery Slaw:

  • 1 large carrot, peeled and grated (optional)

  • 1 large stalk celery, thinly sliced

  • 2 Tbsp. apple cider vinegar

  • Kosher salt

For the Buffalo Chicken Filling:

  • 6 oz. cream cheese, softened

  • 6 Tbsp. unsalted butter, melted

  • 1/3 cup hot sauce

  • 1 1/2 tsp. store-bought or homemade Cajun seasoning

  • 2 1/4 cups chopped rotisserie chicken (about 12 oz.)

  • 1 1/2 cups shredded cheddar

  • 1/4 cup blue cheese crumbles, plus more for serving

  • 4 Tbsp. sliced chives, divided

For the Pastry:

  • All-purpose flour, for surface

  • 1 (8 1/2-oz.) sheet puff pastry

  • Cooking spray

For Serving:

 

  • Ranch dressing


Instructions

Make the Carrot and Celery Slaw

  1. In a small bowl, toss carrot, celery, and vinegar with a pinch of salt. Set aside until ready to serve.

Make the Buffalo Chicken Filling

  1. In a large bowl, stir together cream cheese, melted butter, hot sauce, and Cajun seasoning until smooth and well combined.

  2. Fold in chopped chicken, shredded cheddar, blue cheese, and 3 Tbsp. of chives until evenly distributed.

Prepare the Puff Pastry Bites

  1. On a lightly floured surface, roll the puff pastry into a 12″ x 10″ rectangle. Use a bench scraper or sharp knife to cut the dough into 12 squares.

  2. Spray a standard 12-cup muffin tin with cooking spray. Gently press each square of puff pastry into the bottom of the muffin wells.

  3. Fill each pastry cup with the buffalo chicken mixture.

Bake the Bites

  1. Bake the bites until the pastry is golden brown and the tops are bubbling, about 17 to 20 minutes. Let cool in the tin for 5 to 10 minutes.

Serve

 

  1. Transfer the bites to a platter. Top with the reserved carrot and celery mixture, and sprinkle with the remaining 1 Tbsp. of chives. Serve with ranch dressing on the side.


Notes

  • If you prefer a spicier bite, you can add extra hot sauce or cayenne pepper to the filling.

 

  • These can also be made ahead and reheated for a quick appetizer.
