Description

Bruschetta Chicken Bake is a flavorful, easy-to-make dish with tender chicken breasts topped with a fresh, zesty tomato and basil mixture, then baked with gooey mozzarella cheese. Itโ€™s a comforting, Mediterranean-inspired meal thatโ€™s perfect for a weeknight dinner.


Ingredients

  • 3 boneless, skinless chicken breasts
  • 2 cups diced tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil leaves
  • 2 tbsp olive oil
  • 1 cup mozzarella cheese, shredded or diced
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375ยฐF (190ยฐC).
  2. In a small bowl, combine the diced tomatoes, minced garlic, basil leaves, olive oil, and a pinch of salt and pepper.
  3. Place the chicken breasts in a baking dish and season both sides with salt and pepper.
  4. Top each chicken breast with the tomato and basil mixture, spreading it evenly over the chicken.
  5. Sprinkle shredded mozzarella cheese on top of each chicken breast.
  6. Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  7. Remove from the oven and garnish with additional fresh basil, if desired. Serve hot.

Notes

  • For added flavor, you can drizzle a little balsamic glaze on top after baking.
  • This dish pairs well with a side of roasted vegetables, pasta, or a fresh salad.
  • To make it a little spicier, add red pepper flakes to the tomato mixture before baking.
