Description

Brown Butter Churro Bites are crispy, golden, and buttery treats coated in cinnamon sugar, served with a tangy and sweet wild blueberry dipping sauce for an indulgent dessert or snack.


Ingredients

  • Brown Butter Churro Bites: 1/4 cup (58g) salted butter, 1 cup (240ml) water, 1 tbsp (14g) granulated sugar, pinch of salt, 1 cup (120g) all-purpose flour, 1 egg, at room temperature, 1 tsp (4g) vanilla bean paste or extract
  • Wild Blueberry Dipping Sauce: 8oz wild (or regular) blueberries, fresh or frozen, 1/4 cup (55g) granulated sugar, 1/4 cup (60ml) water, juice from 1/2 a lemon, pinch of salt, 2 tsp (6g) cornstarch + 1 tbsp (15ml) water for slurry, 1/2 tsp (2g) vanilla bean paste or extract
  • Cinnamon Sugar Coating: 1/2 cup (110g) granulated sugar, 1 tbsp (6g) cinnamon

Instructions

  1. Preheat the oven to 400°F (200°C) or heat oil for frying if preferred.
  2. For the churro bites, melt butter in a saucepan over medium heat until it turns golden brown and nutty.
  3. Add water, granulated sugar, and salt, bringing the mixture to a boil.
  4. Remove from heat and stir in the flour until a dough forms.
  5. Allow the dough to cool slightly, then beat in the egg and vanilla until smooth.
  6. Pipe or spoon small bite-sized portions of dough onto a baking sheet or into hot oil to fry until golden brown and crispy.
  7. While warm, roll churro bites in the cinnamon sugar coating until fully coated.
  8. For the wild blueberry sauce, combine blueberries, sugar, water, lemon juice, and salt in a small saucepan over medium heat and cook until berries soften.
  9. Mix cornstarch with water to create a slurry and stir into the sauce, cooking until thickened.
  10. Remove from heat and stir in vanilla extract.
  11. Serve churro bites warm with the wild blueberry dipping sauce.
