Description

Ingredients

  • 4 ounces unsalted butter, melted until browned

  • 1 cup light brown sugar, firmly packed

  • 2 1/2 tablespoons bourbon

  • 1 teaspoon vanilla extract

  • 1 large egg plus 1 egg yolk, at room temperature

  • 1 cup all-purpose flour

  • 1/4 teaspoon ground cinnamon

  • 1/4 teaspoon salt

  • 1/4 cup toasted pecans, roughly chopped

  • 6 ounces semi-sweet chocolate, chopped into chunks

Instructions

  • Preheat oven to 350ยฐF (175ยฐC). Line an 8ร—8-inch baking pan with parchment paper and lightly spray with non-stick spray. Set aside.

  • In a saucepan over medium heat, melt the butter until browned, stirring frequently. Remove from heat and let cool slightly.

  • Transfer the browned butter to a large heatproof mixing bowl. Whisk in the brown sugar until well combined.

  • Stir in the bourbon and vanilla extract. Add the egg and egg yolk, whisking until fully incorporated.

  • Using a rubber spatula, fold in the flour, cinnamon, and salt until just combined. Then, gently fold in the toasted pecans and chocolate chunks.

  • Scrape the batter into the prepared baking pan, spreading it evenly.

  • Bake for 24 minutes, or until the edges are golden and firm while the center remains slightly soft.
