  • 1/2 cup mayonnaise
  • 1 tablespoon lime zest
  • 1 tablespoon lime juice

  • 2 cups shredded cabbage
  • 4 tablespoons minced cilantro
  • 4 tablespoons minced red onion
  • Diced jalapeรฑos, to taste
  • 1 1/2 pounds Louisiana drum, snapper, or other mild white fish
  • 1 teaspoon cumin
  • 1 teaspoon Creole seasoning mix
  • Black and red pepper, to taste
  • 8 small flour tortillas
  • Sliced avocado, diced tomato, cilantro sprigs, lime wedges, for garnish

Instructions

  1. Make the crema by mixing together sour cream, mayonnaise, lime zest, and lime juice. Taste and adjust seasoning, then set aside.
  2. Mix together cabbage, cilantro, red onion, and jalapeรฑos. Add enough of the sour cream mixture to moisten, reserving the remaining crema.
  3. Heat a cast iron griddle over medium-high heat. Sprinkle fish evenly with cumin, Creole seasoning mix, and black and red pepper. Cut fish into ยฝ-inch strips across the grain.
  4. Spray the griddle with cooking oil, then bronze the fish on all sides, turning carefully. Keep warm.
  5. Warm the tortillas one at a time on the griddle, turning once until softened and slightly browned.
  6. To serve, divide the cabbage mixture among the tortillas. Top with fish, then garnish with avocado, tomato, and cilantro. Drizzle with the reserved crema and serve with lime wedges.

Notes

  • Ensure the fish is cooked evenly on all sides for the best texture.
  • Feel free to adjust the heat level by adding more or fewer jalapeรฑos.
  • This recipe can be made with other mild white fish, such as tilapia or cod, if Louisiana drum or snapper is unavailable.
