- 1 onion, chopped
- 2 cloves garlic, minced
- 1 head broccoli, chopped into florets
- 1 cup orzo pasta
- 4 cups chicken broth
- 1 cup milk
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1/4 cup shredded cheddar cheese
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion and garlic until softened, about 5 minutes.
- Add broccoli florets and cook for 5 more minutes until slightly softened.
- Pour in chicken broth, milk, salt, and pepper. Bring to a simmer and stir in orzo.
- Reduce heat to low, cover, and cook for 15-20 minutes until orzo is tender.
- Stir in Parmesan and cheddar cheeses until melted and the sauce is creamy.
- Serve immediately, garnished with extra Parmesan if desired.
