1 cup cooked quinoa

1 1/2 cup finely chopped broccoli

2 large eggs

1/2 cup shredded cheddar cheese

1/4 cup all-purpose or whole wheat flour

1/2 teaspoon garlic powder

1/2 teaspoon onion powder
Instructions

Preheat the oven to 350ยฐF (180ยบC).

In a large mixing bowl, combine the quinoa, broccoli, eggs, cheese, flour, garlic powder, and onion powder. Mix until well combined.

Scoop the mixture into prepared greased muffin tins, using 2 tablespoon portions for each bite.

Bake for about 20 minutes, or until the edges are lightly browned.

Let cool slightly, then run a knife around the edges of each bite to loosen them from the muffin tin.
