Description

These Broccoli Cheddar Quinoa Bites are a delicious and healthy snack or appetizer packed with protein and flavor. Perfect for meal prep, theyโ€™re crunchy on the outside and tender on the inside


Ingredients

  • 1 cup cooked quinoa

  • 1 1/2 cup finely chopped broccoli

  • 2 large eggs

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup all-purpose or whole wheat flour

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder


Instructions

  • Preheat the oven to 350ยฐF (180ยบC).

  • In a large mixing bowl, combine the quinoa, broccoli, eggs, cheese, flour, garlic powder, and onion powder. Mix until well combined.

  • Scoop the mixture into prepared greased muffin tins, using 2 tablespoon portions for each bite.

  • Bake for about 20 minutes, or until the edges are lightly browned.

  • Let cool slightly, then run a knife around the edges of each bite to loosen them from the muffin tin.

  • Store in the refrigerator for up to 1 week, or freeze in resealable plastic bags for up to 3 months.
