- 2 tablespoons extra virgin olive oil
- 1 pound turkey breakfast sausage
- 1/2 small yellow onion, diced
- 1 red bell pepper, seeded and diced
- 1 (30 ounce) bag frozen diced hash brown potatoes, thawed
- 8 ounces freshly shredded cheddar cheese
- 3 tablespoons sliced chives
- 6 large eggs, beaten
- 1/2 cup whole milk
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- In a large skillet, heat olive oil over medium heat. Add turkey sausage and cook until browned, breaking it into small pieces.
- Add diced onion and red bell pepper to the skillet and sauté until softened, about 3–4 minutes.
- Spread the thawed hash browns evenly in the prepared baking dish. Layer the cooked sausage and vegetable mixture over the hash browns.
- Sprinkle shredded cheddar cheese and sliced chives over the top.
- In a bowl, whisk together beaten eggs, milk, salt, and pepper. Pour evenly over the casserole.
- Bake for 35–40 minutes, or until the eggs are set and the top is golden brown.
- Let cool slightly before slicing and serving.

- Use pre-shredded cheese for faster prep.
- Add other vegetables like mushrooms or spinach for extra nutrition.
