Description

This Breakfast Casserole is a hearty and flavorful start to your day, packed with turkey sausage, veggies, shredded hash browns, and gooey cheddar cheese. Easy to prepare and perfect for feeding a crowd or meal prepping for the week.


Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 pound turkey breakfast sausage
  • 1/2 small yellow onion, diced
  • 1 red bell pepper, seeded and diced
  • 1 (30 ounce) bag frozen diced hash brown potatoes, thawed
  • 8 ounces freshly shredded cheddar cheese
  • 3 tablespoons sliced chives
  • 6 large eggs, beaten
  • 1/2 cup whole milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add turkey sausage and cook until browned, breaking it into small pieces.
  3. Add diced onion and red bell pepper to the skillet and sauté until softened, about 3–4 minutes.
  4. Spread the thawed hash browns evenly in the prepared baking dish. Layer the cooked sausage and vegetable mixture over the hash browns.
  5. Sprinkle shredded cheddar cheese and sliced chives over the top.
  6. In a bowl, whisk together beaten eggs, milk, salt, and pepper. Pour evenly over the casserole.
  7. Bake for 35–40 minutes, or until the eggs are set and the top is golden brown.
  8. Let cool slightly before slicing and serving.

Notes

  • Use pre-shredded cheese for faster prep.
  • Add other vegetables like mushrooms or spinach for extra nutrition.
  • This casserole can be made a day ahead and refrigerated; bake just before serving.
