Description

These Breakfast Burritos are the perfect protein-packed meal prep option for busy mornings! Made with savory sausage, fluffy scrambled eggs, creamy hummus, and melty cheese, theyโ€™re easy to make ahead and reheat. Start your day right with this quick and filling breakfast!


Ingredients

  • 4 links turkey or beef sausage, casing removed
  • 4 large eggs, lightly beaten
  • 1/4 cup cottage cheese
  • Kosher salt and black pepper, to taste
  • 1/2 cup hummus
  • 4 (8-inch) flour tortillas
  • 1 cup shredded mixed cheddar cheese
  • 1 Roma tomato, diced
  • 1 small red onion, sliced
  • 2 tsp sumac
  • 1 tbsp fresh lemon juice
  • 1 tbsp extra virgin olive oil

  • Chopped fresh cilantro leaves and lime wedges (optional)

Instructions

  • Cook the sausage: In a pan over medium heat, cook sausage, breaking it apart with a spatula, until fully cooked. Drain excess grease and set aside.
  • Scramble the eggs: In the same pan, scramble eggs with cottage cheese, seasoning with salt and pepper to taste. Cook until fluffy and set aside.
  • Prepare the onions: In a small bowl, mix red onion slices, sumac, lemon juice, olive oil, and a pinch of salt. Set aside.
  • Assemble burritos:
    • Spread hummus evenly over each tortilla.
    • Layer with scrambled eggs, cooked sausage, shredded cheese, diced tomatoes, and seasoned onions.
    • Roll tightly into burritos.

  • Store & Serve: Wrap each burrito in parchment paper and refrigerate. When ready to eat, reheat and enjoy! Garnish with cilantro and lime wedges, if desired.
