Ingredients
-
1 tablespoon butter
-
1 (14 oz) can sweetened condensed milk
-
8 oz (about 3 cups) unsweetened shredded or flaked coconut
-
1 cup coconut milk
-
1/2 cup heavy cream
Instructions
-
In a medium saucepan, combine butter, sweetened condensed milk, shredded coconut, and coconut milk.
-
Cook over medium-low heat, stirring constantly, until the mixture thickens and starts to release from the bottom of the pan (about 8–10 minutes).
-
Stir in the heavy cream and remove from heat. The pudding will continue to thicken as it cools.
-
Pour into individual serving glasses or bowls.
-
Serve at room temperature or chilled, as preferred.
Notes
-
For added texture, use flaked coconut instead of finely shredded.
-
You can lightly toast some coconut for garnish if serving chilled.
-
This pudding can also be used as a filling for cakes or tarts!
