These Brazilian Chicken Croquettes, also known as Coxinha, are crispy on the outside with a creamy, savory chicken filling inside. They make the perfect party snack or appetizer, bringing authentic Brazilian street food right to your kitchen.

- For the Dough:
- 1 3/4 cups (450ml) whole milk
- 1 3/4 cups (450ml) chicken broth or water
- 1 tablespoon salt
- 3 1/2 tablespoons (50g) butter
- 2 large (625g) peeled and mashed potatoes
- 3 1/2 cups (450g) sifted all-purpose flour (or 4 cups/500g if in Brazil)
- For the Filling:
- 2 large (300g) boneless skinless chicken breasts
- 1/4 cup (1/2 stick) butter
- 4 minced garlic cloves
- 1 finely chopped small onion
- 1 tablespoon paprika
- 2 tablespoons cream cheese
- 4 tablespoons tomato sauce
- 1 tablespoon water
- Salt and black pepper to taste
- Fresh chopped parsley to taste
- For Breading & Frying:
- 1/2 cup milk
- Bread crumbs as needed
- Vegetable oil for frying
Instructions
- In a large pot, combine milk, chicken broth or water, salt, butter, and mashed potatoes. Bring to a boil.
- Once boiling, reduce heat and gradually add flour, stirring constantly until the dough forms and pulls away from the sides of the pot. Remove from heat and let cool.
- Cook the chicken breasts until fully cooked, then shred finely.
- In a skillet, melt butter and sautรฉ garlic and onion until fragrant and soft.
- Add paprika, tomato sauce, water, shredded chicken, cream cheese, salt, pepper, and parsley. Cook until well combined and creamy. Let filling cool.
- Take a small portion of dough and flatten it in your hand. Place a spoonful of chicken filling in the center and mold the dough around it, forming a teardrop shape.
- Dip each croquette in milk, then coat with breadcrumbs.
- Heat oil in a deep pan and fry the croquettes in batches until golden brown and crispy. Drain on paper towels and serve warm.

- Ensure the dough is well-kneaded and smooth to make shaping easier.
- You can prepare the filling in advance and store it in the fridge until ready to use.
- Freeze uncooked croquettes for up to 3 monthsโfry straight from frozen, adding a few extra minutes to the cook time.
