- 2 lbs. salmon fillets, skinless
- 5.3 oz puck Boursin cheese (basil & chives or garlic & fine herbs)
- 12 oz dry linguine or your favorite pasta
- 2 pints grape tomatoes (red and multi-colored, if possible)
- 5 oz fresh spinach
- 3 tablespoons capers
- 1 teaspoon dried basil
- 1 teaspoon red pepper flakes
- 1/2 teaspoon cracked pepper
- 1/2 teaspoon salt
- 1/2 cup dry white wine (optional, pinot grigio, chardonnay, or sauv blanc)
- 1/2 cup freshly grated parmesan cheese
- 1 lemon (zest and juice)
Instructions
- Preheat the oven to 375ยฐF (190ยฐC).
- In a large baking dish, place the salmon fillets and season with salt, pepper, and a drizzle of olive oil.
- Scatter the grape tomatoes, spinach, capers, and dried basil around the salmon fillets.
- In a separate pot, cook the pasta according to the package directions until al dente. Drain and set aside.
- In the same pot, melt the Boursin cheese with the white wine over medium heat, stirring until smooth. Add the cooked pasta to the pot and toss to coat in the sauce. Season with red pepper flakes, cracked pepper, and lemon zest.
- Pour the pasta mixture over the salmon and vegetables in the baking dish.
- Top with parmesan cheese and lemon juice.
- Bake in the preheated oven for 20 minutes or until the salmon is cooked through and flakes easily.
- Serve and enjoy!
Notes
- If you prefer a creamier sauce, you can add a splash of cream along with the Boursin cheese.
- This dish pairs beautifully with a crisp white wine like pinot grigio.
