Description

  • 1/4 cup monk fruit sweetener or sugar, plus more for sprinkling
  • 2 teaspoons finely grated lemon zest
  • 3 tablespoons all-purpose flour, plus more for dusting
  • 4 cups fresh blueberries
  • 2 tablespoons fresh lemon juice
  • 1 egg white, beaten

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Roll out the pie dough on a lightly floured surface until it’s about 12 inches in diameter. Transfer the dough to the prepared baking sheet.
  3. In a large bowl, toss the blueberries with monk fruit sweetener or sugar, lemon zest, flour, and lemon juice until evenly coated.
  4. Pour the blueberry mixture onto the center of the dough, leaving about 2 inches of border around the edges.
  5. Carefully fold the edges of the dough over the blueberries, pleating it to form a rustic crust, leaving the center exposed.
  6. Brush the exposed dough with the beaten egg white and sprinkle the top with a little extra sugar for a golden finish.
  7. Bake the galette for 35-40 minutes, or until the crust is golden and the blueberries are bubbling.
