- 16 ounces mini farfalle pasta (454g)
- 2-3 boneless skinless chicken breasts
- Salt and freshly ground black pepper
- 1 teaspoon lemon zest
- 1 teaspoon garlic powder, divided
- 1 teaspoon Italian seasoning, divided
- 1/2 teaspoon onion powder
- 3 Tablespoons olive oil, divided
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 3 cloves garlic, minced
- 4 Tablespoons butter (57g)
- 1/4 cup fresh lemon juice (60g)
- 1 cup freshly grated parmesan cheese (95g)
- 1/4 cup fresh chopped parsley (15g)
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- Season chicken breasts with salt, pepper, lemon zest, 1/2 teaspoon garlic powder, 1/2 teaspoon Italian seasoning, and onion powder.
- Heat 2 Tablespoons olive oil in a large skillet over medium heat. Cook chicken until golden brown and cooked through, about 5–7 minutes per side. Remove from skillet and let rest, then slice into bite-sized pieces.
- In the same skillet, add remaining 1 Tablespoon olive oil. Sauté zucchini and yellow squash until tender, about 4–5 minutes.
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in butter and lemon juice, allowing butter to melt and form a sauce.
- Add cooked pasta and sliced chicken to the skillet, tossing to coat in the lemon butter sauce.
- Mix in parmesan cheese and sprinkle with remaining garlic powder and Italian seasoning.
- Garnish with fresh chopped parsley and serve warm.
Notes
- Use freshly grated parmesan for the best flavor and texture.
- Adjust lemon juice to taste for more or less acidity.
- Optional: add cherry tomatoes or spinach for extra color and flavor.
- Cook chicken fully but avoid overcooking to keep it tender.
