Description

This Biscuits and Gravy Egg Bake is the ultimate comfort breakfast! A casserole-style dish that combines fluffy eggs, cheddar cheese, and tender biscuit pieces, all smothered in creamy green chile sausage gravy. Perfect for a cozy morning or brunch with the family, this savory bake is guaranteed to satisfy.

Ingredients

  • Biscuits (amount depends on your preference, typically 4-6 biscuits, cut into pieces)

  • 6 large eggs

  • 1 cup shredded cheddar cheese

  • 1 tablespoon olive oil (for greasing the baking dish)

For the Gravy:

ย

  • 1 pound sausage (preferably sausage with green chiles)

  • 1/4 cup flour

  • 2 cups milk

  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC). Grease a 9ร—13-inch baking dish with olive oil.

  2. Prepare the biscuits: Cut the biscuits into small bite-sized pieces and layer them at the bottom of the baking dish.

  3. Make the sausage gravy:

    • In a large skillet, cook the sausage over medium heat, breaking it up into crumbles as it cooks. Once browned, sprinkle the flour over the sausage and stir to combine.

    • Slowly add the milk, whisking continuously to avoid lumps. Simmer until the gravy thickens, and season with salt and pepper to taste.

  4. Prepare the egg mixture:

    • In a bowl, whisk the eggs and cheddar cheese together until well combined. Pour over the biscuit pieces in the baking dish.

  5. Assemble the bake: Pour the sausage gravy evenly over the egg and biscuit mixture.

  6. Bake: Place the dish in the oven and bake for 30โ€“40 minutes, or until the eggs are fully set and golden brown on top.

  7. Serve: Let it cool slightly before serving. Slice and enjoy!

Notes

  • You can use pre-made biscuits or homemade biscuits for this recipe.

  • Adjust the seasoning in the gravy according to your preference, and feel free to add extra green chiles for more heat.

  • Leftovers can be stored in the fridge for up to 3 days and reheated in the microwave or oven.
