Description

Biscoff Rocky Road (Biscoff Tiffin) is a decadent, no-bake dessert featuring crunchy Biscoff biscuits, gooey chocolate, and a variety of tasty add-ins. Perfect for a sweet treat or gift!


Ingredients

  • 200g Biscoff biscuits, broken into pieces
  • 200g milk chocolate, broken into pieces
  • 100g dark chocolate, broken into pieces
  • 50g butter
  • 3 tbsp golden syrup
  • 100g mini marshmallows
  • 50g dried cranberries or raisins (optional)
  • 50g Biscoff spread (for drizzling, optional)

Instructions

  1. Line an 8-inch square baking tin with parchment paper.
  2. In a saucepan, melt together the butter, milk chocolate, dark chocolate, and golden syrup over low heat. Stir occasionally until smooth.
  3. Remove from heat and add the broken Biscoff biscuits, mini marshmallows, and dried cranberries (if using). Stir to combine, making sure everything is coated with the chocolate mixture.
  4. Pour the mixture into the prepared tin and press down gently to level the top.
  5. If desired, drizzle Biscoff spread over the top and swirl to create a marbled effect.
  6. Chill in the fridge for at least 2 hours until set. Once set, cut into squares or bars.
  7. Serve and enjoy your sweet, crunchy, and gooey Biscoff Rocky Road!
