Description

A moist and fluffy birthday sheet cake with a rich chocolate cream cheese frosting, perfect for celebrations and easy to decorate for any occasion.


Ingredients

  • 2 cups all-purpose flour (272g)
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1.5 teaspoons kosher salt
  • 1 cup unsalted butter, softened (16 tablespoons)
  • 1 1/2 cups white sugar (300g)
  • 2 large eggs, room temperature
  • 1.5 tablespoons vanilla extract
  • 1/2 cup sour cream (120g), room temperature
  • 1 cup whole milk (240ml), room temperature
  • Chocolate Cream Cheese Frosting:
  • 8 ounces cream cheese, full-fat block, room temperature
  • 3/4 cup unsalted butter (12 tablespoons), room temperature
  • 5 ounces semi-sweet chocolate, melted and cooled
  • 1 teaspoon kosher salt
  • 1 tablespoon vanilla extract
  • 2-3 cups powdered sugar, sifted, as needed and to taste
  • 1/4 cup Dutch processed cocoa powder (24g)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan or line with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Mix in the sour cream until smooth.
  6. Alternate adding the dry ingredients and milk, beginning and ending with the dry ingredients, mixing until just combined.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool completely before frosting.
  10. For the frosting, beat the cream cheese and butter together until smooth and creamy.
  11. Mix in the melted chocolate, salt, and vanilla extract.
  12. Gradually add powdered sugar and cocoa powder until desired consistency and sweetness are reached.
  13. Frost the cooled cake and decorate as desired.
