Scale
- 2 cups plain flour
- 1 cup unsalted butter, softened
- 1/2 cup caster sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup strawberry jam
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line a baking tray with parchment paper.
- In a mixing bowl, cream the softened butter and caster sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until smooth and fully combined.
- In a separate bowl, whisk together plain flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing gently until a soft dough forms.
- Roll tablespoon sized portions of dough into balls and place them evenly spaced on the prepared tray.
- Using your thumb or the back of a small spoon, gently press an indent into the center of each dough ball.
- Spoon a small amount of strawberry jam into each indent, being careful not to overfill.
- Bake for 12 to 15 minutes, or until the edges are lightly golden.
- Allow the biscuits to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Ensure the butter is softened but not melted for proper creaming.
- If the dough feels too soft, chill it for 20 minutes before shaping.
- Use thick jam to prevent excessive spreading during baking.
- Store cooled biscuits in an airtight container for up to 5 days.
