- 4 cups all-purpose flour
- 10 tablespoons cold unsalted butter, cubed
- 2 cups feta cheese, crumbled
- 2 large eggs
- 6 1/2 tablespoons sour cream
- 1 egg, beaten (for brushing)
- Poppy seeds, for topping
- Caraway seeds, for topping
- Sesame seeds, for topping
- Coarse salt, for topping
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, mix flour and cubed butter until it resembles coarse crumbs. Stir in feta cheese.
- In a separate bowl, beat eggs with sour cream, then add to flour mixture. Mix just until a dough forms.
- On a floured surface, roll dough into a rectangle about 1/4 inch thick. Chill for 15–30 minutes if dough is too soft.
- Cut into strips using a knife or pizza cutter. Transfer to prepared baking sheet.
- Brush each strip with beaten egg and sprinkle with poppy seeds, sesame, caraway, or coarse salt as desired.
- Bake for 18–22 minutes until golden brown and crisp. Cool slightly before serving.
