Description

Soft and fluffy Berry Lemon Muffins bursting with fresh berries and bright lemon flavor. These golden domed muffins have a tender crumb and a light sprinkle of coarse sugar on top, making them perfect for breakfast, brunch, or an afternoon treat.


Ingredients

  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 3/4 cup whole milk
  • 1 large lemon, zested and juiced
  • 1 tablespoon lemon zest
  • 1 cup mixed berries, fresh
  • 2 tablespoons coarse sugar

Instructions

  1. Preheat oven to 375°F and line a 12 cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, whisk melted butter and granulated sugar until combined. Add eggs, whole milk, lemon zest, and lemon juice, and whisk until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Carefully fold in the mixed berries.
  6. Divide the batter evenly among the muffin cups, filling nearly to the top.
  7. Sprinkle coarse sugar over each muffin.
  8. Bake for 20 to 25 minutes until golden and a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Toss berries lightly in flour before adding to prevent sinking.

  • If using frozen berries, add them straight from the freezer without thawing.
