- 1 tablespoon lemon zest
- 1 cup mixed berries, fresh
- 2 tablespoons coarse sugar
Instructions
- Preheat oven to 375°F and line a 12 cup muffin tin with paper liners.
- In a large bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, whisk melted butter and granulated sugar until combined. Add eggs, whole milk, lemon zest, and lemon juice, and whisk until smooth.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Carefully fold in the mixed berries.
- Divide the batter evenly among the muffin cups, filling nearly to the top.
- Sprinkle coarse sugar over each muffin.
- Bake for 20 to 25 minutes until golden and a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Toss berries lightly in flour before adding to prevent sinking.
- Do not overmix the batter to keep the muffins tender.
- If using frozen berries, add them straight from the freezer without thawing.
