Description

This Berry Croissant Bake is like a fruity Danish in casserole form โ€” layers of buttery croissants, sweet cream cheese, and juicy berries baked to golden perfection. Itโ€™s a dreamy brunch or dessert recipe that can be prepped ahead, making it perfect for busy mornings or holiday mornings. Whether youโ€™re after simple high protein meals, healthy recipes, or recipes to try for your next breakfast gathering, this oneโ€™s a winner.

Ingredients

  • 4 large croissants, baked and broken into small pieces

  • 1 cup sliced strawberries

  • 1/2 cup blueberries

  • 1/2 cup raspberries

  • 1 block (8 oz) cream cheese, softened

  • 2/3 cup granulated sugar

  • 3/4 cup milk

  • 2 large eggs

  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC). Spray a 9ร—9-inch baking dish with nonstick spray.

  2. Evenly spread the broken croissant pieces in the prepared dish. Scatter the strawberries, blueberries, and raspberries on top.

  3. In a mixing bowl, beat the cream cheese until fluffy. Gradually add the sugar, milk, eggs, and vanilla extract. Mix until smooth and well combined.

  4. Pour the cream cheese mixture evenly over the croissants and berries.

  5. Cover and refrigerate for at least 15 minutes or up to 14 hours.

  6. Uncover and bake for 35โ€“40 minutes, or until golden brown and set.

  7. Serve warm with powdered sugar or syrup, if desired. Enjoy!

Notes

  • Can be assembled the night before and baked fresh in the morning.

  • Try adding a touch of lemon zest for extra brightness.

  • Frozen berries can be used if fresh arenโ€™t available โ€” just thaw and drain before using.
