Description

These air fryer stuffed mini peppers are a healthy twist on classic nachos, packed with lean ground turkey, refried beans, salsa, and melty cheese! A quick and easy low-carb snack that’s loaded with flavor.


Ingredients

  • 911 mini bell peppers (about 8 oz / 227g)
  • 1/4 lb lean ground turkey (113g)
  • 1/2 small onion, finely chopped
  • 1/2 jalapeño pepper, finely chopped
  • Cooking oil spray
  • 1/2 can fat-free refried beans (7 1/2 oz / 213g)
  • 1/4 cup salsa
  • 1 tsp chili powder
  • 1/4 tsp salt (optional)
  • 4 oz light Mexican shredded cheese (113g)

Optional Toppings:

  • Chopped cilantro
  • Sour cream
  • Chopped tomato
  • Chopped avocado
  • Sliced olives

Instructions

Step 1: Prep the Peppers & Ingredients

  1. Cut the tops off the mini bell peppers, slice them in half lengthwise, and remove the seeds.
  2. Finely chop the onion and jalapeño.

Step 2: Cook the Turkey Mixture

  1. Crumble the raw ground turkey into small pieces.
  2. Place the turkey, onion, and jalapeño into the air fryer basket and spray lightly with cooking oil spray.
  3. Air fry at 375°F (190°C) for 5 minutes. Crumble the turkey again after cooking. If needed, air fry for 1 extra minute.

Step 3: Mix the Filling

  1. In a bowl, mix the cooked turkey, onions, and jalapeño with the refried beans, salsa, chili powder, and salt. Stir until well combined.

Step 4: Assemble & Air Fry

  1. Arrange the mini bell pepper halves in a single layer in the air fryer basket, cut side up.
  2. Stuff each pepper half with the turkey and bean mixture, packing them tightly.
  3. Sprinkle shredded cheese evenly over the peppers.
  4. Air fry at 350°F (175°C) for 6-8 minutes, until the cheese is melted and golden brown.

Step 5: Garnish & Serve

  1. Let the peppers cool for a few minutes, then add your favorite nacho toppings.
  2. Serve immediately and enjoy!

Notes

  • Make It Spicier: Add extra jalapeños, hot salsa, or red pepper flakes.
  • Make It Vegetarian: Swap the turkey for black beans or crumbled tofu.
  • Storage: Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the air fryer at 350°F for 3-4 minutes.
