  • 1 lb ground beef

  • 1 tbsp Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar or mozzarella cheese (low-fat, if preferred)

Instructions

  • Prepare the Zucchini Boats:

    • Preheat oven to 375ยฐF.
    • Slice zucchini in half lengthwise and scoop out the flesh using a spoon.
    • Chop the scooped-out zucchini flesh and set it aside.
    • Place zucchini halves on a parchment-lined or greased baking sheet.
  • Cook the Beef Filling:

    • Heat olive oil in a skillet over medium heat.
    • Add chopped onion and sautรฉ for 2-3 minutes until golden.
    • Stir in garlic and cook for a few seconds until fragrant.
