Description

Beef Ramen Noodles is a flavorful and easy dinner made with ground beef, instant ramen, and a delicious stir-fry sauce. Itโ€™s a quick, customizable dish with veggies and a savory sauce perfect for busy weeknights.


Ingredients

  • Sauce:
    • 1 cup beef broth
    • 3/4 cup chicken broth
    • 1/4 cup soy sauce
    • 2 tablespoons creamy peanut butter
    • 2 tablespoons honey
    • 1 teaspoon hot sauce (or sriracha)
    • 1/2 teaspoon ground ginger
  • Stir Fry:
    • 1 lb ground beef
    • Salt and pepper to taste
    • 1/4 cup dry white wine (or broth)
    • 1 tablespoon peanut oil (can substitute olive oil)
    • 4 cloves garlic, minced
    • 1 yellow onion, sliced
    • 1/2 cup carrots, julienned
    • 1 red bell pepper, sliced
    • 8 oz white button mushrooms, sliced
    • 2 cups shredded cabbage (optional)
    • 2 1/2 tablespoons cornstarch
    • 1 (3 oz.) packet ramen noodles (seasoning packet discarded)
  • Garnishes:
    • 3 green onions, sliced
    • Toasted sesame seeds and/or roughly chopped peanuts

Instructions

  1. Prepare the Sauce:
    In a large measuring cup, combine the beef broth, chicken broth, soy sauce, peanut butter, honey, hot sauce, and ground ginger. Set aside.
  2. Cook the Beef:
    Season the ground beef with salt and pepper and cook it in a large skillet over medium-high heat, breaking it up as it cooks. Cook for 7-10 minutes until browned and cooked through. Drain any grease and set aside.
  3. Deglaze the Skillet:
    Turn off the heat and add the wine to the same skillet, scraping up any browned bits from the bottom. Set the heat to medium and let it reduce by half, about 2 minutes.
  4. Cook the Vegetables:
    Add the peanut oil and garlic to the skillet. Cook for 1 minute. Then, add the onions, carrots, and mushrooms, cooking for 5 minutes. Add the bell peppers and cabbage (if using), cooking for another 3 minutes.
  5. Make the Sauce:
    Stir the cornstarch into the sauce mixture until well combined, then add the sauce to the skillet. Bring to a boil and cook until thickened. Reduce the heat to simmer.
  6. Cook the Ramen:
    Bring water to a boil and cook the ramen noodles for 1 minute, just until they start to loosen up. Drain and add to the skillet with the sauce.
  7. Combine and Heat:
    Return the cooked ground beef to the skillet and stir everything together, heating through.
  8. Garnish and Serve:
    Serve the ramen with sliced green onions, sesame seeds, and/or chopped peanuts on top. Enjoy!
