Description
Golden and flaky beef and lamb sausage rolls wrapped in buttery puff pastry and baked until crisp, filled with a juicy, warmly spiced meat mixture.

- 1/2 pound ground beef
- 1/2 pound ground lamb
- 2 puff pastry sheets, thawed
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1 large egg, beaten (for egg wash)
- 1 tablespoon sesame seeds
- 1 tablespoon chopped chives
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- In a mixing bowl, combine ground beef, ground lamb, diced onion, minced garlic, parsley, salt, black pepper, cumin, and paprika until evenly mixed.
- Lightly roll out the puff pastry sheets on a floured surface and cut each sheet in half lengthwise.
- Shape the meat mixture into logs along the center of each pastry strip. Fold pastry over the filling and seal edges with a little water. Place seam side down on the prepared baking sheet.
- Brush tops with beaten egg, sprinkle with sesame seeds, and lightly score the tops with a sharp knife.
- Bake for 20 to 25 minutes until the pastry is golden brown and the filling is cooked through to 160°F internally.
- Remove from oven and sprinkle with chopped chives. Cool slightly before serving.
Notes
- Chill assembled rolls for 15 minutes before baking for better puff and shape.
- Use meat with some fat content to keep the filling juicy.
- Reheat leftovers in the oven to maintain crisp pastry.
