Description

Golden and flaky beef and lamb sausage rolls wrapped in buttery puff pastry and baked until crisp, filled with a juicy, warmly spiced meat mixture.


Ingredients

  • 1/2 pound ground beef
  • 1/2 pound ground lamb
  • 2 puff pastry sheets, thawed
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon sesame seeds
  • 1 tablespoon chopped chives

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine ground beef, ground lamb, diced onion, minced garlic, parsley, salt, black pepper, cumin, and paprika until evenly mixed.
  3. Lightly roll out the puff pastry sheets on a floured surface and cut each sheet in half lengthwise.
  4. Shape the meat mixture into logs along the center of each pastry strip. Fold pastry over the filling and seal edges with a little water. Place seam side down on the prepared baking sheet.
  5. Brush tops with beaten egg, sprinkle with sesame seeds, and lightly score the tops with a sharp knife.
  6. Bake for 20 to 25 minutes until the pastry is golden brown and the filling is cooked through to 160°F internally.
  7. Remove from oven and sprinkle with chopped chives. Cool slightly before serving.

Notes

  • Chill assembled rolls for 15 minutes before baking for better puff and shape.
  • Use meat with some fat content to keep the filling juicy.
  • Reheat leftovers in the oven to maintain crisp pastry.
