- 1/3 cup coconut sugar, packed
- 2 tablespoons sesame oil
- 2 tablespoons chili garlic sauce
- 1/4 cup rice wine vinegar

- 1/2 teaspoon kosher salt
- 1 large shallot, thinly sliced
- 2 1/4 lbs top sirloin steak, thinly sliced
- 2 tablespoons avocado oil
- 1 cup plain greek yogurt
- 1/4 cup sriracha
- 2 tablespoons rice vinegar
- 1/4 cup low sodium soy sauce
- 2 tablespoons honey
- 1 teaspoon fresh grated ginger
- 1/2 teaspoon crushed red pepper flakes
- 3 cups cooked rice
- 4 eggs, fried
- 1 cup kimchi
- 1 English cucumber, cut into ribbons
- Sesame seeds, optional
Instructions
- In a large bowl, whisk together soy sauce, coconut sugar, sesame oil, chili garlic sauce, rice wine vinegar, garlic, ginger, salt, and sliced shallot.
- Add the sliced steak to the marinade and toss until fully coated. Let marinate for at least 20 minutes.
- Heat avocado oil in a large skillet over medium high heat.
- Cook the marinated beef in batches, searing until caramelized and cooked through. Remove and set aside.
- In a separate bowl, whisk together greek yogurt, sriracha, rice vinegar, soy sauce, honey, ginger, and crushed red pepper flakes until smooth.
- Fry eggs in a nonstick pan to your desired doneness.
- Assemble bowls by adding rice, bulgogi beef, fried egg, kimchi, cucumber ribbons, and a generous drizzle of spicy sauce.
- Finish with sesame seeds if desired and serve warm.
