Description

Savory beef bulgogi bowls served over warm rice with fried eggs, fresh cucumber, tangy kimchi, and a creamy spicy yogurt sauce.


Ingredients

  • 1/2 cup low sodium soy sauce
  • 1/3 cup coconut sugar, packed
  • 2 tablespoons sesame oil
  • 2 tablespoons chili garlic sauce
  • 1/4 cup rice wine vinegar
  • 2 cloves garlic, mashed
  • 1 tablespoon freshly grated ginger
  • 1/2 teaspoon kosher salt
  • 1 large shallot, thinly sliced
  • 2 1/4 lbs top sirloin steak, thinly sliced
  • 2 tablespoons avocado oil
  • 1 cup plain greek yogurt
  • 1/4 cup sriracha
  • 2 tablespoons rice vinegar
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons honey
  • 1 teaspoon fresh grated ginger
  • 1/2 teaspoon crushed red pepper flakes
  • 3 cups cooked rice
  • 4 eggs, fried
  • 1 cup kimchi
  • 1 English cucumber, cut into ribbons
  • Sesame seeds, optional

Instructions

  1. In a large bowl, whisk together soy sauce, coconut sugar, sesame oil, chili garlic sauce, rice wine vinegar, garlic, ginger, salt, and sliced shallot.
  2. Add the sliced steak to the marinade and toss until fully coated. Let marinate for at least 20 minutes.
  3. Heat avocado oil in a large skillet over medium high heat.
  4. Cook the marinated beef in batches, searing until caramelized and cooked through. Remove and set aside.
  5. In a separate bowl, whisk together greek yogurt, sriracha, rice vinegar, soy sauce, honey, ginger, and crushed red pepper flakes until smooth.
  6. Fry eggs in a nonstick pan to your desired doneness.
  7. Assemble bowls by adding rice, bulgogi beef, fried egg, kimchi, cucumber ribbons, and a generous drizzle of spicy sauce.
  8. Finish with sesame seeds if desired and serve warm.

Notes

  • Slice the beef thin and against the grain for best tenderness.
  • Cook beef in batches to ensure proper caramelization.
