Description

This quick and flavorful beef and pepper rice bowl is a perfect weeknight meal, combining tender ground beef, colorful bell peppers, and a savory sauce. Ready in just 25 minutes, itโ€™s a delicious and satisfying dish that pairs well with white or brown rice.

Ingredients

Units Scale
  • 1 lb ground beef
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 3 cups cooked white or brown rice
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 1 tsp garlic powder
  • 1/2 tsp ground ginger
  • 1/4 tsp red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  • Heat sesame oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess grease.
  • Add diced bell peppers and onion. Cook for 4-5 minutes until vegetables are slightly softened.
  • Stir in soy sauce, hoisin sauce, garlic powder, ground ginger, and red pepper flakes (if using). Cook for another 2-3 minutes, allowing the flavors to blend.
  • Add cooked rice to the skillet and toss everything together until evenly coated in the sauce.
  • Divide into bowls, garnish with sliced green onions, and serve warm.

Notes

  • Substitute ground beef with ground turkey or chicken for a lighter option.
  • Add extra vegetables like carrots, snap peas, or mushrooms for more variety.
  • For a low-carb version, swap rice with cauliflower rice.
