Description

These Bang Bang Shrimp Lettuce Wraps are a perfect balance of crispy, creamy, and fresh! Juicy shrimp are air-fried to golden perfection, then tossed in a sweet and spicy bang bang sauce. Served in crisp lettuce cups, they make a delicious, healthy dinner or appetizer.

For the Shrimp:

  • 2 lbs shrimp, peeled and deveined
  • 3/4 cup flour
  • 1/2 cup cornstarch
  • 1 cup panko breadcrumbs
  • 3 large eggs

For the Bang Bang Sauce:

  • 1 cup mayonnaise
  • 1/2 cup sweet chili sauce
  • 1 tbsp soy sauce
  • 1 tsp rice wine vinegar
  • 1 tsp ketchup (optional)

For Serving:

  • 1 head butter lettuce or romaine lettuce

Instructions

  • Prepare the Shrimp: Cut the shrimp into thirds.
  • Coat the Shrimp: In a bowl, mix flour, panko breadcrumbs, and cornstarch. In another bowl, beat the eggs. Dip shrimp pieces into the egg mixture, then into the flour mixture, shaking off any excess.
  • Air-Fry the Shrimp: Arrange shrimp in a single layer in the air fryer basket, ensuring they do not touch. Spray generously with cooking oil and cook at 400°F (200°C) for 6 minutes.
  • Shake & Continue Cooking: After 6 minutes, shake the basket for even frying. Spray again with cooking oil and air-fry for another 6 minutes, or until golden brown and crispy.
  • Make the Bang Bang Sauce: While the shrimp is cooking, combine mayonnaise, sweet chili sauce, soy sauce, rice wine vinegar, and ketchup in a bowl. Mix well.
  • Toss the Shrimp: Pour the bang bang sauce over the cooked shrimp and toss until evenly coated.
  • Assemble the Lettuce Wraps: Place a few shrimp in each lettuce cup, drizzle with extra sauce, and serve immediately.

Notes

  • For extra crunch, add chopped peanuts or crispy fried shallots as a topping.
  • Adjust the heat level by adding Sriracha or red pepper flakes to the sauce.
  • If you don’t have an air fryer, deep-fry or bake the shrimp instead.
