- 3 large whole chicken breasts (preferably organic)
- 2 teaspoons Kosher salt
- 8 ounces haggis
- 9 strips bacon
- 1 teaspoon olive oil or butter
- 1 recipe whisky sauce, for serving
Instructions
- Preheat Your Equipment: Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Combine Ingredients: Butterfly chicken breasts and season with salt. Fill with haggis and fold closed.
- Prepare Your Cooking Vessel: Wrap each stuffed breast with 3 strips of bacon, tucking ends or securing with toothpicks.
- Assemble the Dish: Optionally sear wrapped chicken in a hot skillet with olive oil or butter, then transfer to baking dish.
- Cook to Perfection: Bake uncovered for 25–30 minutes until chicken is fully cooked and bacon crisp.
- Finishing Touches: Let rest for 5 minutes. Prepare or warm whisky sauce.
- Serve and Enjoy: Slice and serve with whisky sauce and your favorite sides.
