For the Cookies:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup finely chopped pistachios
  • 1 cup finely chopped walnuts

For the Filling:

  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup caramel sauce

Instructions

  • Preheat the oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper.
  • In a mixing bowl, beat the butter, granulated sugar, and brown sugar until creamy.
  • Add honey and vanilla extract, and mix until well combined.
  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until combined.
  • Fold in the finely chopped pistachios and walnuts.
  • Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them evenly. Bake for 10โ€“12 minutes, or until the cookies are lightly golden.
  • Remove the cookies from the oven and allow them to cool completely.
  • For the filling, mix the softened cream cheese and powdered sugar in a bowl until smooth and creamy.
  • Spread the cream cheese mixture on the flat side of one cookie, then sandwich it with another cookie.
  • Drizzle caramel sauce over the top of the sandwich cookies.
