For the Cookies:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup brown sugar
- 1/4 cup honey
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup finely chopped pistachios
- 1 cup finely chopped walnuts
For the Filling:
- 1 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 cup caramel sauce
Instructions
- Preheat the oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper.
- In a mixing bowl, beat the butter, granulated sugar, and brown sugar until creamy.
- Add honey and vanilla extract, and mix until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until combined.
- Fold in the finely chopped pistachios and walnuts.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them evenly. Bake for 10โ12 minutes, or until the cookies are lightly golden.
- Remove the cookies from the oven and allow them to cool completely.
- For the filling, mix the softened cream cheese and powdered sugar in a bowl until smooth and creamy.
- Spread the cream cheese mixture on the flat side of one cookie, then sandwich it with another cookie.
- Drizzle caramel sauce over the top of the sandwich cookies.
