Description

Roasted Garlic Tahini Yogurt Dip:

  • 1 head of garlic
  • Oil (for roasting)
  • 1/2 cup unsweetened non-dairy yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons tahini
  • 1 small handful chopped fresh parsley
  • 1 small handful chopped fresh mint
  • Sea salt and ground black pepper, to taste

Crispy Baked Sweet Potato Fries:

  • 2 small-medium sweet potatoes, peeled (about 750g)
  • 2โ€“3 tablespoons arrowroot powder
  • Cayenne, cinnamon, thyme, garlic powder, rosemary, turmeric, or other salt-free seasoning
  • High heat-tolerant oil spray (such as avocado oil)
  • Fine sea salt, to taste

Instructions

  • Roast the Garlic: Preheat oven to 400ยฐF (200ยฐC). Slice the top off the garlic head, drizzle with oil, wrap in foil, and roast for 30-40 minutes until soft. Let cool.
  • Make the Dip: Squeeze the roasted garlic cloves into a bowl. Mash and mix with yogurt, lemon juice, tahini, parsley, mint, salt, and pepper. Stir until smooth and set aside.
  • Prepare the Sweet Potatoes: Cut sweet potatoes into evenly sized fries. Soak in cold water for at least 1 hour to remove excess starch, then drain and pat dry.
  • Coat the Fries: Toss the fries with arrowroot powder and seasonings until evenly coated. Lightly spray with oil.
  • Bake the Fries: Preheat oven to 425ยฐF (220ยฐC). Spread fries in a single layer on a lined baking sheet. Bake for 40-50 minutes, flipping halfway, until crispy.
  • Serve: Sprinkle with sea salt and serve hot with roasted garlic tahini yogurt dip.

Notes

  • Soaking the fries in water helps remove starch, making them crispier.
  • Avoid overcrowding the baking sheet to ensure even crisping.
