Lemon Donuts:
- 1 1/3 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 2 Tbsp lemon zest (about 2 lemons)
- 1 1/2 Tbsp fresh lemon juice
- 1 egg
- 1/2 cup buttermilk
- 1/2 tsp vanilla extract
- 1 Tbsp butter, melted
Lemon Glaze:
- 1 cup powdered sugar
- 2–3 Tbsp fresh lemon juice
- 2 tsp lemon zest (optional)
Lemon Sugar:
- 1 cup granulated sugar
- 1 Tbsp lemon zest
- 5 Tbsp butter, melted
Instructions
- Preheat oven to 400°F. Grease a 6-count donut pan with baking spray and set aside.
- In a bowl, whisk together flour, sugar, baking powder, salt, and lemon zest. Make a well in the center.
- Add lemon juice, buttermilk, and egg to the well, then whisk until combined.
- Stir in vanilla extract and melted butter, mixing until smooth.
- Spoon or pipe the batter into the donut pan, filling each cavity about ⅔ full.
- Bake for 10-12 minutes, or until the donuts spring back when lightly touched.
- Let cool for 4-5 minutes in the pan, then transfer to a wire rack to cool completely.
Topping Options:
- Lemon Glaze: Whisk together powdered sugar and lemon juice. Dip cooled donuts in the glaze and let set.
- Lemon Sugar: Mix sugar and lemon zest. Brush donuts with melted butter, then dip in lemon sugar.
- Powdered Sugar: Dust cooled donuts lightly with powdered sugar.
