Lemon Donuts:

  • 2 Tbsp lemon zest (about 2 lemons)

  • 1 egg
  • 1/2 cup buttermilk
  • 1/2 tsp vanilla extract
  • 1 Tbsp butter, melted

Lemon Glaze:

  • 1 cup powdered sugar
  • 23 Tbsp fresh lemon juice
  • 2 tsp lemon zest (optional)

Lemon Sugar:

  • 1 cup granulated sugar
  • 1 Tbsp lemon zest
  • 5 Tbsp butter, melted

Instructions

  1. Preheat oven to 400°F. Grease a 6-count donut pan with baking spray and set aside.
  2. In a bowl, whisk together flour, sugar, baking powder, salt, and lemon zest. Make a well in the center.
  3. Add lemon juice, buttermilk, and egg to the well, then whisk until combined.
  4. Stir in vanilla extract and melted butter, mixing until smooth.
  5. Spoon or pipe the batter into the donut pan, filling each cavity about ⅔ full.
  6. Bake for 10-12 minutes, or until the donuts spring back when lightly touched.
  7. Let cool for 4-5 minutes in the pan, then transfer to a wire rack to cool completely.

Topping Options:

  • Lemon Glaze: Whisk together powdered sugar and lemon juice. Dip cooled donuts in the glaze and let set.
  • Lemon Sugar: Mix sugar and lemon zest. Brush donuts with melted butter, then dip in lemon sugar.
  • Powdered Sugar: Dust cooled donuts lightly with powdered sugar.
