Description

Baked Cod with Lemon and Garlic is a light, flavorful dish where tender cod fillets are coated in a spice blend, baked to perfection, and drizzled with a zesty lemon garlic sauce. A deliciously healthy meal!

  • 1.5 lb Cod fillet pieces, 4-6 pieces
  • 1/4 cup chopped fresh parsley leaves
  • Lemon Sauce:
    • 5 tbsp fresh lemon juice
    • 5 tbsp extra virgin olive oil
    • 2 tbsp melted butter
    • 5 garlic cloves, minced
  • For Coating:
    • 1/3 cup all-purpose flour
    • 1 tsp ground coriander
    • 3/4 tsp sweet Spanish paprika
    • 3/4 tsp ground cumin
    • 3/4 tsp salt
    • 1/2 tsp black pepper

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a shallow dish, combine the flour, ground coriander, paprika, cumin, salt, and black pepper.
  3. Coat the cod fillets with the spice-flour mixture, ensuring they are evenly coated on all sides.
  4. Place the coated cod fillets on the prepared baking sheet and bake for 12-15 minutes or until the fish is cooked through and flakes easily with a fork.
  5. While the fish is baking, prepare the lemon sauce by whisking together the lemon juice, olive oil, melted butter, and minced garlic in a small bowl. Adjust salt and pepper to taste.
  6. Once the cod is done, remove from the oven and drizzle the lemon garlic sauce over the fish. Garnish with chopped parsley before serving.
  7. Serve the baked cod with your favorite sides, like steamed vegetables or rice.

Notes

  • If you like your cod extra crispy, you can broil the fish for the last 2-3 minutes of cooking.
