- 1/4 cup chopped fresh parsley leaves
-
Lemon Sauce:
- 5 tbsp fresh lemon juice
- 5 tbsp extra virgin olive oil
- 2 tbsp melted butter
- 5 garlic cloves, minced
-
For Coating:
- 1/3 cup all-purpose flour
- 1 tsp ground coriander
- 3/4 tsp sweet Spanish paprika
- 3/4 tsp ground cumin
- 3/4 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a shallow dish, combine the flour, ground coriander, paprika, cumin, salt, and black pepper.
- Coat the cod fillets with the spice-flour mixture, ensuring they are evenly coated on all sides.
- Place the coated cod fillets on the prepared baking sheet and bake for 12-15 minutes or until the fish is cooked through and flakes easily with a fork.
- While the fish is baking, prepare the lemon sauce by whisking together the lemon juice, olive oil, melted butter, and minced garlic in a small bowl. Adjust salt and pepper to taste.
- Once the cod is done, remove from the oven and drizzle the lemon garlic sauce over the fish. Garnish with chopped parsley before serving.
- Serve the baked cod with your favorite sides, like steamed vegetables or rice.
Notes
- If you like your cod extra crispy, you can broil the fish for the last 2-3 minutes of cooking.
- For a slightly different flavor, swap the coriander for ground turmeric or curry powder.
- This dish pairs well with roasted potatoes or a simple green salad.
- To make this dish gluten-free, replace the all-purpose flour with a gluten-free flour blend.
