- 1 kg side of salmon
- 2 cups fresh cranberries (225g)
- 1/2 cup maple syrup (or honey)
- 1/2 cup water
Instructions
- Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper.
- Place the salmon fillet on the tray, skin-side down, and pat dry with a paper towel.
- In a saucepan, combine the fresh cranberries, maple syrup, and water. Bring to a simmer over medium heat.
- Cook for 8–10 minutes, stirring occasionally, until the cranberries burst and the mixture thickens into a glossy sauce.
- Spoon the cranberry glaze generously over the salmon.
- Bake the salmon for 15–20 minutes, or until it flakes easily with a fork and the glaze caramelizes slightly.
- Let rest for 5 minutes before serving. Spoon extra cranberry sauce over the top if desired.
