Description

Ingredients

  • 1 kg side of salmon
  • 2 cups fresh cranberries (225g)
  • 1/2 cup maple syrup (or honey)
  • 1/2 cup water

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper.
  2. Place the salmon fillet on the tray, skin-side down, and pat dry with a paper towel.
  3. In a saucepan, combine the fresh cranberries, maple syrup, and water. Bring to a simmer over medium heat.
  4. Cook for 8–10 minutes, stirring occasionally, until the cranberries burst and the mixture thickens into a glossy sauce.
  5. Spoon the cranberry glaze generously over the salmon.
  6. Bake the salmon for 15–20 minutes, or until it flakes easily with a fork and the glaze caramelizes slightly.
  7. Let rest for 5 minutes before serving. Spoon extra cranberry sauce over the top if desired.
