Description

Baked Chicken with Crispy Feta & Vinaigrette combines spiced chicken tenders, vibrant roasted bell peppers, and a crispy feta topping, all drizzled with a tangy, honeyed vinaigrette for a fresh, flavorful meal.


Ingredients

  • 1/2 pound boneless skinless chicken tenders
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin seed
  • 1/2 teaspoon ground ginger
  • Kosher salt and black pepper to taste
  • Chili flakes to taste
  • 2 bell peppers, sliced (red, orange, or yellow)
  • 1/2โ€“1 Fresno pepper, seeded and sliced
  • 1 shallot, sliced
  • 2 cloves garlic, chopped
  • 4 ounces feta cheese block, patted dry
  • 2 tablespoons cornstarch
  • 1/3 cup mixed fresh herbs (cilantro, parsley, dill)
  • Optional: rice for serving

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.
  2. In a bowl, toss chicken tenders with olive oil, paprika, cumin, ginger, salt, pepper, and chili flakes. Arrange the chicken on the baking sheet.
  3. In a separate bowl, combine sliced bell peppers, Fresno pepper, shallot, and garlic. Spread them around the chicken on the baking sheet.
  4. Cut feta into cubes, then toss in cornstarch. Scatter the feta pieces over the chicken and vegetables.
  5. Bake for 20-25 minutes or until the chicken is cooked through and the feta is crispy.
  6. While the chicken bakes, whisk together the vinaigrette ingredients: olive oil, lemon juice, champagne vinegar, and honey.
  7. Once the chicken is done, remove from the oven and drizzle with the vinaigrette. Garnish with fresh herbs and serve warm, optionally with rice.

Notes

  • For an extra crispy feta, broil for 1-2 minutes after baking.
  • Feel free to substitute the Fresno pepper with a jalapeรฑo or other mild chili pepper.
  • Serve with a side of quinoa or couscous for a more filling meal.
