Description

Rich, creamy, and full of flavor, this baked caramelized onions and chicken dish features tender chicken thighs, sweet onions, sun-dried tomatoes, and a hint of balsamic — all brought together in a silky cream sauce. A comforting meal that’s perfect for weeknights or impressing guests.


Ingredients

  • 3 large yellow onions, sliced thin
  • 1 head garlic, top sliced off
  • 1/2 cup sun-dried tomatoes, chopped
  • Heavy drizzle of olive oil
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp Italian herb blend
  • 1 tbsp balsamic vinegar
  • 1.7 lbs boneless, skinless chicken thighs, cut into strips
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 cup heavy cream
  • 1 handful fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a large skillet, heat olive oil over medium. Add sliced onions and cook slowly until caramelized, about 20–25 minutes.
  3. Add garlic head, sun-dried tomatoes, salt, paprika, Italian herbs, and balsamic vinegar. Stir and cook for a few more minutes.
  4. In a bowl, toss chicken strips with garlic powder, onion powder, and a pinch of salt.
  5. Transfer onion mixture into the prepared baking dish and place the chicken strips on top.
  6. Pour heavy cream evenly over the dish.
  7. Bake uncovered for 25–30 minutes, or until chicken is fully cooked and sauce is bubbling.
  8. Sprinkle fresh parsley on top before serving.

Notes

  • Let the dish rest a few minutes before serving to allow the sauce to thicken.
  • Use a mandoline for quick and even onion slices.
  • Substitute spinach or mushrooms for added vegetables.
  • Adjust seasoning before baking to suit your taste.
