- 3 large yellow onions, sliced thin
- 1 head garlic, top sliced off
- 1/2 cup sun-dried tomatoes, chopped
- Heavy drizzle of olive oil
- 1 tsp salt
- 1 tsp paprika
- 1 tsp Italian herb blend
- 1 tbsp balsamic vinegar
- 1.7 lbs boneless, skinless chicken thighs, cut into strips
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 cup heavy cream
- 1 handful fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a large skillet, heat olive oil over medium. Add sliced onions and cook slowly until caramelized, about 20–25 minutes.
- Add garlic head, sun-dried tomatoes, salt, paprika, Italian herbs, and balsamic vinegar. Stir and cook for a few more minutes.
- In a bowl, toss chicken strips with garlic powder, onion powder, and a pinch of salt.
- Transfer onion mixture into the prepared baking dish and place the chicken strips on top.
- Pour heavy cream evenly over the dish.
- Bake uncovered for 25–30 minutes, or until chicken is fully cooked and sauce is bubbling.
- Sprinkle fresh parsley on top before serving.

- Let the dish rest a few minutes before serving to allow the sauce to thicken.
