Description

These Bailey’s Irish Cream Brownies are ultra-fudgy with layers of rich chocolate, creamy Irish cream frosting, and silky ganache. The perfect indulgent treat for chocolate lovers, they’re decadent, moist, and truly unforgettable.


Ingredients

  • 2 1/2 cups granulated sugar (500g)
  • 2 tablespoons canola oil (30mL)
  • 1 tablespoon vanilla extract
  • 5 large eggs
  • 1 cup all-purpose flour (130g)
  • 1/2 cup + 1 tablespoon Dutch-processed cocoa powder (57g)
  • 1/4 cup black cocoa powder (25g)
  • 2 tablespoons malted milk powder (20g, optional)
  • 3/4 teaspoon salt
  • 4 oz chopped baking chocolate or 1/2 cup mini semi-sweet chocolate chips
  • 1 cup salted butter, softened (227g)
  • 4 cups powdered sugar (520g)
  • 2 oz Irish Cream liqueur (60mL)
  • 1 tablespoon vanilla extract
  • 4 oz bittersweet chocolate (113g)
  • 3 oz heavy cream (90mL)
  • 2 oz Irish Cream liqueur (60mL)
  • 1 tablespoon salted butter (14g)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper.
  2. Melt butter in a saucepan. Stir in sugar, oil, and vanilla. Whisk in eggs one at a time.
  3. In a separate bowl, mix flour, cocoa powders, malted milk powder, and salt. Combine with wet ingredients, then fold in chopped chocolate or chips.
  4. Pour batter into prepared pan and bake for 30–35 minutes until a toothpick has moist crumbs. Cool completely.
  5. Beat softened butter until creamy. Add powdered sugar, Irish cream, and vanilla. Spread frosting on cooled brownies and chill 30 minutes.
  6. For ganache, heat cream, Irish cream, and butter until warm. Add chopped chocolate and stir until smooth. Spread over chilled frosting and chill again until set.
  7. Slice and serve chilled or at room temperature.
