Description

This Avocado Cilantro Lime Rice is creamy, zesty, and packed with fresh flavors! Made with long-grain rice, mashed avocado, and lime, itโ€™s the perfect easy side dish for tacos, burrito bowls, or grilled meats. Quick, healthy, and delicious!


Ingredients

  • 1 cup long-grain rice

  • 2 cups water

  • 1 large avocado, peeled and mashed

  • 1/4 cup cilantro, chopped

  • 1 lime, juice and zest

Instructions

  • Cook the rice: In a pot, bring rice and water to a boil. Reduce heat, cover, and simmer for 20 minutes or until the water is absorbed.

  • Mix in the flavors: Stir in mashed avocado, cilantro, lime juice, and zest. Mix well.
