- 1 sheet puff pastry, thawed if frozen
- 1 bunch fresh asparagus, about 1 pound, trimmed
- 4 ounces goat cheese, crumbled
- 2 large eggs
- 1/2 cup heavy cream
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together eggs, heavy cream, salt, and black pepper until smooth.
- Place the puff pastry sheet on the prepared baking sheet and lightly score a 1 inch border around the edges without cutting all the way through.
- Pour the egg mixture evenly inside the scored border.
- Arrange trimmed asparagus spears neatly over the filling and crumble goat cheese evenly on top.
- Drizzle lightly with olive oil.
- Bake for 20 to 25 minutes, or until the pastry is puffed and golden and the filling is set.
- Remove from oven and allow to cool slightly before slicing and serving.
