Description

This Asparagus & Goat Cheese Tart features flaky puff pastry topped with tender asparagus and creamy tangy goat cheese. Elegant yet simple, it is perfect for brunch, lunch, or a light dinner.


Ingredients

  • 1 sheet puff pastry, thawed if frozen
  • 1 bunch fresh asparagus, about 1 pound, trimmed
  • 4 ounces goat cheese, crumbled
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together eggs, heavy cream, salt, and black pepper until smooth.
  3. Place the puff pastry sheet on the prepared baking sheet and lightly score a 1 inch border around the edges without cutting all the way through.
  4. Pour the egg mixture evenly inside the scored border.
  5. Arrange trimmed asparagus spears neatly over the filling and crumble goat cheese evenly on top.
  6. Drizzle lightly with olive oil.
  7. Bake for 20 to 25 minutes, or until the pastry is puffed and golden and the filling is set.
  8. Remove from oven and allow to cool slightly before slicing and serving.
