Description

A vibrant Puerto Rican seafood rice dish packed with tender shrimp, squid, mussels, sofrito, peppers, peas, and aromatic spices, all cooked together in one flavorful pot.


Ingredients

  • 1 package frozen seafood mix (or combination of shrimp, squid, mussels)
  • 1 tablespoon olive oil or achiote oil
  • 1 yellow onion, diced
  • 1/2 cup diced peppers (bell, pimento, piquillo, or fire-roasted)
  • 2 garlic cloves, minced
  • 1/3 cup sofrito
  • 2 teaspoons sazon seasoning
  • 1 teaspoon salt
  • 2 cups short to medium grain white rice, rinsed
  • 2 cups water
  • 1/2 cup frozen or fresh peas
  • Optional: chopped cilantro for garnish
  • Optional: lime wedges for serving

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Sauté diced onions, peppers, and garlic for 4 minutes until softened.
  3. Stir in sofrito and cook for another 2–3 minutes until fragrant.
  4. Add sazon seasoning, salt, and rinsed rice. Stir well and toast for 2 minutes.
  5. Pour in water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  6. After 15 minutes, fold in seafood mix and peas. Cover and cook for 10–12 more minutes until seafood is cooked through and rice is tender.
  7. Turn off heat and let rest, covered, for 5–10 minutes. Fluff with a fork.
  8. Garnish with cilantro and serve with lime wedges if desired.

Notes

  • Add seafood near the end to avoid overcooking.
  • Use a wide pot or caldero for even cooking.
  • Let the sofrito cook down for deeper flavor.
  • Replace part of the water with seafood broth for added richness.
