Description

A no-bake layered dessert with a buttery biscuit base, creamy whipped filling, and sweet apricot layers that feels light, fresh, and indulgent.


Ingredients

  • 2 cups digestive biscuits, crushed
  • 1/2 cup butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup heavy whipping cream
  • 3/4 cup powdered sugar
  • 1 cup apricot preserves
  • 4 fresh apricots, halved and sliced

Instructions

  1. Combine crushed digestive biscuits with melted butter until evenly coated.
  2. Press the mixture firmly into the base of an 8×8 inch dish to form the crust.
  3. In a bowl, beat cream cheese with powdered sugar until smooth.
  4. Whip the heavy cream until soft peaks form, then gently fold into the cream cheese mixture.
  5. Spread the cream mixture evenly over the biscuit base.
  6. Spoon apricot preserves over the cream layer and spread gently.
  7. Arrange fresh apricot slices on top.
  8. Chill for at least 3 hours before slicing and serving.
