Instructions
- Combine crushed digestive biscuits with melted butter until evenly coated.
- Press the mixture firmly into the base of an 8×8 inch dish to form the crust.
- In a bowl, beat cream cheese with powdered sugar until smooth.
- Whip the heavy cream until soft peaks form, then gently fold into the cream cheese mixture.
- Spread the cream mixture evenly over the biscuit base.
- Spoon apricot preserves over the cream layer and spread gently.
- Arrange fresh apricot slices on top.
- Chill for at least 3 hours before slicing and serving.
