Description

These apricot basil breakfast meatballs are a flavorful and protein-packed morning treat. Sweet apricots and fresh basil complement the savory pork and turkey, making them perfect for breakfast or brunch.


Ingredients

  • 1 lb ground pork
  • 1 lb ground turkey or ground chicken
  • 4 garlic cloves, minced (1 1/2 tablespoons)
  • 1 1/2 cups finely chopped fresh spinach
  • 1/3 cup finely chopped fresh basil leaves
  • 1/2 cup finely diced dried apricots
  • 1 teaspoon fine salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground pork, ground turkey (or chicken), minced garlic, spinach, basil, diced apricots, salt, and pepper. Mix until just combined.
  3. Form the mixture into small meatballs, about 1–1.5 inches in diameter, and place them on the prepared baking sheet.
  4. Bake for 18–22 minutes, or until the meatballs are cooked through and golden brown.
  5. Remove from oven and let cool slightly before serving.

Notes

  • These meatballs can be made ahead and stored in the refrigerator for up to 3 days or frozen for up to 3 months.
  • Serve with eggs, toast, or a light salad for a balanced breakfast.
  • Adjust the apricot quantity for more or less sweetness.
