These apricot basil breakfast meatballs are a flavorful and protein-packed morning treat. Sweet apricots and fresh basil complement the savory pork and turkey, making them perfect for breakfast or brunch.

- 1 lb ground pork
- 1 lb ground turkey or ground chicken
- 4 garlic cloves, minced (1 1/2 tablespoons)
- 1 1/2 cups finely chopped fresh spinach
- 1/3 cup finely chopped fresh basil leaves
- 1/2 cup finely diced dried apricots
- 1 teaspoon fine salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine ground pork, ground turkey (or chicken), minced garlic, spinach, basil, diced apricots, salt, and pepper. Mix until just combined.
- Form the mixture into small meatballs, about 1–1.5 inches in diameter, and place them on the prepared baking sheet.
- Bake for 18–22 minutes, or until the meatballs are cooked through and golden brown.
- Remove from oven and let cool slightly before serving.
Notes
- These meatballs can be made ahead and stored in the refrigerator for up to 3 days or frozen for up to 3 months.
- Serve with eggs, toast, or a light salad for a balanced breakfast.
- Adjust the apricot quantity for more or less sweetness.
