Ingredients

Units Scale

For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups unsweetened applesauce
  • 1 cup raisins or chopped nuts (optional)

For the Glaze (Optional):

  • 1 cup powdered sugar
  • 2โ€“3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat the oven
Preheat your oven to 350ยฐF (175ยฐC). Grease and flour a 9ร—13-inch baking pan or a 9-inch Bundt pan.
  • Mix the dry ingredients
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Set aside.
  • Cream the butter and sugars
In a large mixing bowl, use an electric mixer to beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2โ€“3 minutes).
  • Add the wet ingredients
Beat in the eggs one at a time, followed by the vanilla extract. Mix in the applesauce until smooth.
  • Combine wet and dry ingredients
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix. Fold in raisins or nuts, if desired.
  • Bake the cake
Pour the batter into the prepared pan and spread it evenly. Bake for 35โ€“40 minutes (for a 9ร—13 pan) or 45โ€“50 minutes (for a Bundt pan), or until a toothpick inserted into the center comes out clean.
  • Cool the cake
Let the cake cool in the pan for 10โ€“15 minutes, then transfer it to a wire rack to cool completely.
  • Make the glaze (optional)
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cake.
  • Serve
Slice and serve as is, or pair with a dollop of whipped cream or a scoop of vanilla ice cream.

Notes

  • Substitute whole wheat flour for added fiber.
  • Add a pinch of ground ginger for extra warmth.
