- 1/2 cup rolled oats
- 1/2 cup chopped dried apples
- 1/2 cup unsweetened almond butter
- 1/4 cup chopped pecans, toasted

Instructions
- In a food processor, combine the Medjool dates, rolled oats, chopped dried apples, almond butter, toasted pecans, and ground cinnamon.
- Pulse the mixture until everything is finely chopped and well combined, scraping down the sides as needed.
- Once the mixture has come together, scoop out small portions and roll them into balls, about 1 inch in diameter.
- Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
- Store the energy balls in an airtight container in the refrigerator for up to 1 week.
Notes
- If the mixture is too dry, add a little more almond butter to help it come together.
- Feel free to swap out the pecans for other nuts like walnuts or almonds if you prefer.
