Description

Apple Pie Energy Balls are a delicious and healthy snack inspired by the flavors of apple pie. Packed with Medjool dates, dried apples, almond butter, and toasted pecans, these bite-sized treats are perfect for satisfying your sweet tooth while providing a boost of energy.


Ingredients

  • 3/4 cup Medjool dates, pitted and chopped
  • 1/2 cup rolled oats
  • 1/2 cup chopped dried apples
  • 1/2 cup unsweetened almond butter
  • 1/4 cup chopped pecans, toasted
  • 1 tablespoon ground cinnamon

Instructions

  1. In a food processor, combine the Medjool dates, rolled oats, chopped dried apples, almond butter, toasted pecans, and ground cinnamon.
  2. Pulse the mixture until everything is finely chopped and well combined, scraping down the sides as needed.
  3. Once the mixture has come together, scoop out small portions and roll them into balls, about 1 inch in diameter.
  4. Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
  5. Store the energy balls in an airtight container in the refrigerator for up to 1 week.

Notes

  • If the mixture is too dry, add a little more almond butter to help it come together.
  • Feel free to swap out the pecans for other nuts like walnuts or almonds if you prefer.
  • For a touch of extra sweetness, you can drizzle a little honey over the energy balls before serving.
