Ingredients
Cookie Crust

200g digestive or graham crackers

1/2 tsp ground nutmeg

Apples and Crumble

150g apple, diced small (1-2 apples)

1 tbsp granulated sugar

100g all-purpose flour

80g dark brown sugar

70g butter, room temperature
Cheesecake Filling

600g full-fat cream cheese, room temperature

200g granulated sugar

150g sour cream (14-18%), room temperature

1 tbsp cornstarch

2 tsp vanilla extract

3 large eggs, room temperature
Instructions

Prepare the Cookie Crust

Preheat oven to 160ยฐC (325ยฐF).

In a food processor, blend cookies, brown sugar, cinnamon, and nutmeg until fine.

Add melted butter and mix until combined.

Press into a 22 cm (9-inch) springform pan lined with parchment paper.

Bake for 10 minutes, then let cool.

Prepare the Apples and Crumble

Toss diced apples with sugar and cinnamon; set aside.

In another bowl, mix flour, brown sugar, and butter until crumbly.

Make the Cheesecake Filling

Preheat oven to 160ยฐC (325ยฐF).

Beat cream cheese on low speed for 1 minute. Gradually add sugar and mix until smooth.

In a separate bowl, mix sour cream and cornstarch. Add to cream cheese along with vanilla extract and mix.

Add eggs one at a time, mixing on low until combined.

Assemble and Bake

Pour cheesecake batter over the crust.

Sprinkle cinnamon-sugar apples on top, then the crumble.

Place the springform pan in a larger cake pan and set in a water bath.

Bake for 1 hour 20-30 minutes, until the center is slightly wobbly.

Turn off the oven, leave the door slightly open, and let cool for 1 hour.

Remove from the water bath and cool on a rack for another hour.

Refrigerate for at least 6 hours or overnight before serving.
