- 1 large white or brown onion
- 4 garlic cloves, peeled
- 1/2 cup flat-leaf parsley
- 1 lb (500g) ground chicken
- 1 tablespoon ground cumin
- 1 tablespoon smoked paprika
- 1 tablespoon dried oregano
- 2 teaspoons chili flakes
- 2 teaspoons sumac
- 2 teaspoons za’atar
- 2 teaspoons salt
- Black pepper to taste
- 1/4 cup Greek yogurt
- 1 tablespoon olive oil
- 8 oz (225g) cherry tomatoes, chopped
- 1 cucumber, diced
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 375°F (190°C) if required.
- In a food processor, blend onion, garlic, and parsley into a smooth paste.
- Transfer mixture to a bowl. Add ground chicken, yogurt, olive oil, and all spices. Mix well until fully combined.
- Form into a tight loaf or press into a parchment-lined loaf pan.
- Place in the air fryer and cook for 25–30 minutes, flipping once halfway through, until internal temperature reaches 165°F (74°C).
- Let rest for 5–10 minutes, then slice thinly. For extra crisp, return slices to the air fryer for 2–3 minutes.
- Mix cherry tomatoes, cucumber, lemon juice, salt, and pepper to make the salad.
- Serve sliced chicken doner with salad and your favorite dips or flatbreads.
