These Air Fryer Twice Baked Potatoes are creamy, cheesy, and loaded with flavor. Perfectly cooked in the air fryer, they have a crispy skin with a rich, fluffy filling that’s easy to customize with your favorite toppings.

- 4 large russet potatoes (Maris Piper / baking potatoes)
- 2 tbsp olive oil
- 4 strips bacon (optional)
- 1/2 cup (125ml) whole milk
- 3 tbsp unsalted butter, cubed
- 1/2 cup (120g) sour cream, more as needed
- 4 green onions, sliced very thinly
- 1 small bunch fresh chives, sliced very thinly
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp sweet paprika
- 1 cup (125g) grated cheddar cheese, plus extra to top
- 1/4 cup (25g) grated parmesan
- Salt and pepper to season
Instructions
- Preheat the air fryer to 400°F (200°C).
- Wash and dry the potatoes, then rub them with olive oil and a pinch of salt.
- Place the potatoes in the air fryer basket and cook for 35-40 minutes, or until tender when pierced with a fork.
- If using bacon, cook it in a skillet until crispy, then crumble and set aside.
- Once potatoes are done, let them cool slightly. Slice each potato in half lengthwise and scoop out the flesh into a bowl, leaving a thin shell intact.
- Add butter, milk, sour cream, green onions, chives, salt, black pepper, onion powder, garlic powder, sweet paprika, and 1 cup cheddar cheese to the potato flesh. Mash until creamy and well combined.
- Spoon the mixture back into the potato shells and top with extra cheddar cheese, parmesan, and crumbled bacon if using.
- Return the stuffed potatoes to the air fryer and cook at 375°F (190°C) for 5-7 minutes, or until the cheese is melted and golden.
- Serve warm and enjoy!
Notes
- You can customize the filling with your favorite herbs or spices.
- For extra crispiness, broil the stuffed potatoes in an oven for 2-3 minutes instead of using the air fryer for the final step.
- Leftover potatoes can be stored in the refrigerator for up to 3 days and reheated in the air fryer.
