Description

These Air Fryer Twice Baked Potatoes are creamy, cheesy, and loaded with flavor. Perfectly cooked in the air fryer, they have a crispy skin with a rich, fluffy filling that’s easy to customize with your favorite toppings.


Ingredients

  • 4 large russet potatoes (Maris Piper / baking potatoes)
  • 2 tbsp olive oil
  • 4 strips bacon (optional)
  • 1/2 cup (125ml) whole milk
  • 3 tbsp unsalted butter, cubed
  • 1/2 cup (120g) sour cream, more as needed
  • 4 green onions, sliced very thinly
  • 1 small bunch fresh chives, sliced very thinly
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp sweet paprika
  • 1 cup (125g) grated cheddar cheese, plus extra to top
  • 1/4 cup (25g) grated parmesan
  • Salt and pepper to season

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Wash and dry the potatoes, then rub them with olive oil and a pinch of salt.
  3. Place the potatoes in the air fryer basket and cook for 35-40 minutes, or until tender when pierced with a fork.
  4. If using bacon, cook it in a skillet until crispy, then crumble and set aside.
  5. Once potatoes are done, let them cool slightly. Slice each potato in half lengthwise and scoop out the flesh into a bowl, leaving a thin shell intact.
  6. Add butter, milk, sour cream, green onions, chives, salt, black pepper, onion powder, garlic powder, sweet paprika, and 1 cup cheddar cheese to the potato flesh. Mash until creamy and well combined.
  7. Spoon the mixture back into the potato shells and top with extra cheddar cheese, parmesan, and crumbled bacon if using.
  8. Return the stuffed potatoes to the air fryer and cook at 375°F (190°C) for 5-7 minutes, or until the cheese is melted and golden.
  9. Serve warm and enjoy!

Notes

  • You can customize the filling with your favorite herbs or spices.
  • For extra crispiness, broil the stuffed potatoes in an oven for 2-3 minutes instead of using the air fryer for the final step.
  • Leftover potatoes can be stored in the refrigerator for up to 3 days and reheated in the air fryer.
